The Country Club of Little Rock

Culinary Intern

June - August 2020 • Little Rock, AR

What I liked

I really loved the freedom for creativity in the kitchen allowed at this country club. I was able to see two different kitchen environments and got to help out with preparing lobster and a whole pig! I also really enjoyed the fact that there were several different types of people working here, it allowed me to experience other people's cultures. The people were truly a caring team and I loved being able to grow as a professional in this internship.

What I wish was different

What I wish would have been different was just the allotted time that was given to experience other areas within the country club. I mainly only worked in the pantry area of the main kitchen but I would have loved to experience the other stations in the kitchen. I would have also appreciated some more time in front-of-house duties.

Advice

Be flexible and adaptable. I came into this internship during COVID-19 so there was a lot of changing of plans often last minute but this can be beneficial in learning how to handle quick changes to plans. Also, make sure to voice what it is specifically that you want to do to ensure that you get what you want out of your internship.
